When you order rice directly from the farm, you have the ability to specify how you would like your rice milled.
What does “milling rice” mean?
After the rice has been harvested and dried, its next step is to be turned from “paddy rice” to brown rice. This is done with a machine that removes the inedible husk. Brown rice is ready to eat! Brown rice can be further milled, or polished, either to White or to Semi-White, known in Japanese as “haigamai” depending on the customer’s preference.
Brown rice contains more micronutrients and fiber, but requires more time and more water to cook to a palatable softness. White rice is faster cooking, slightly lower in calories per unit of weight and has a more delicate flavor profile. Semi-white is an intermediate grade balancing these qualities.
